CARRABBA'S POLLO ROSA MARIA
It was totally amazing. I am of course partial to all things Italian. This was chicken that was stuffed with fontina and ham. Of course we did not have the ham, BUT it was AMAZING to say the least. I immediately came home and tired to find a knock of recipe. I found one right away and I figured I was on my way. WRONG. Portland and surrounding areas does not have the best selection of cheese crack. So finally 4 months later I actually ran into some Fontina in the specialty cheese isle at Walmart in Franklin. My long search ended and that $8.00 cheese came home with me. Last night we had the dish and all everyone could say is. That is the best cheese. I now know I dont have to put all the time in effort in this recipe, just give them the cheese. This afternoon we are having Fontina cheese bagels *wink* I am excited, yet very saddened because it is the last of the cheese. I may go through withdrawl till I find it again. So make sure you grab some whenever you see it.
